Ingredients

  • 2 tbsp. vegetable oil
  • 1 tsp. minced garlic
  • 1 tsp. ginger paste
  • four large eggs
  • 3 cups cooked rice (for fresh rice alternatives, see article)

 

SEASONAL VEGETABLES

1 cup chopped crimini mushrooms (other mushrooms may be used)

1/4 head cabbage, finely chopped

1 jalapeño pepper, seeded and finely chopped (depending on your spicy tolerance)

VEGETABLES, FROZEN

1/2 cup frozen peas 1 cup frozen broccoli

Instructions

When the oil is heated, add the jalapeño peppers, cabbage, and mushrooms and cook for 5 minutes, or until the mushrooms are golden brown.

Cook for 30 seconds, or until the minced garlic and ginger paste are aromatic.

In a glass, whisk the eggs with a fork and then pour into the pan; heat for 1 to 2 minutes, or until they just begin to come together.

Stir in the day-old rice for approximately 3 minutes, or until the egg clings to the rice as it cooks (great tip courtesy of Pinch of Yum).

Finally, add two tablespoons of soy sauce, sesame oil, turmeric, salt, and pepper to the frozen veggies.

Remove from the fire, add the remaining soy sauce, garnish with green onions, and serve right away!

 

Notes: Although I’ve specified the veggies I had on hand, you may substitute nearly any vegetable in this recipe. Best. Weeknight. Ever. Meal.

Fresh veggies should be cooked for at least a minute or two (and well washed before cutting), whereas frozen vegetables take less time.
